Cauliflower Pizza Bites
I like to make a lot of these little guys at one time and then freeze them for later as a healthy equivalent to snacking on pizza rolls or bagel bites during a late night study session or for your other various causes of midnight munchies!
2 cups grated cauliflower
¼ cup egg whites
1 cup 1% cottage cheese
¼ tsp garlic salt
1 tsp oregano
Turkey pepperoni slices
Preheat oven to 450.
Put paper muffin liners (the kind on cupcakes) into muffin tray.
In a frying pan stir the grated cauliflower until it’s clear (about 5-8 minutes).
Place all the other ingredients in a food processor and blend until smooth.
Mix with cauliflower and stir.
Poor the mixture into muffin tray, add the pep on top, and put ‘em in the oven.
Bake for 25-30 minutes.
Remove paper liners—note: if bottoms are still gooey simply flip them over, place them on a cookie sheet, and put them back in the oven for a few minutes until golden brown.
