Low Calorie Italian Chicken and Vegetable Stir Fry
This chicken stir fry dish is a quick and easy dinner recipe. It is a very healthy alternative to regular pasta with sauce, provides a source of protein with the chicken and will be sure to satisfy you for hours!
2 tsp. Olive Oil
2 chopped Onions
1 medium Carrot, chopped
1 stalk of Celery, sliced
¾ pounds Boneless Chicken Breast, sliced
14 ½ oz Canned Crushed Tomatoes
1 tbsp. Basil
Salt and Pepper
First, heat the oil in a skillet over medium to high heat.
Next, add the onions, carrots, and celery and stir until softened for about 10 minutes.
Then, add the sliced chicken and cook for about 5 minutes.
After 5 minutes is up turn the chicken ensuring that all sides are fully cooked.
Add tomatoes, basil, salt and pepper into the skillet.
Reduce heat to low and stir for about 10 minutes or until the chicken is fully cooked.
Plate, serve and enjoy! This recipe serve 2 to 3 people.
