Chill out in the summertime sun while enjoying this unique and enticing pecan summer salad with fruit. Perfect served independently or as a refreshing side to fish. With blueberries, peaches and pecans, this salad features a variety of delightfully natural tastes and textures!
4 cups Mixed Greens
1/2 cup Chopped Pecans
6 oz. Blueberries
4 tbsp. Light Balsamic Salad Dressing (optional)
4 tbsp. Gorgonzola Cheese (optional)
Wash/rinse peach under cold water, remove sticker.
Use a knife to cut in half all the way around the fruit, and then twist to separate the peach halves. Remove and discard pit.
Lay the peach halves face-down, and use a knife to dice the peach into small cubes.
Take out a large bowl, and add the mixed greens, blueberries, peach and pecans. Toss to evenly distribute the dry ingredients before adding the dressing and cheese.
Sprinkle on the Gorgonzola cheese, and mix well with the other ingredients.
Dress to taste, before or after serving. This recipe will comfortably serve lunch, or a light dinner, for two people. Enjoy!
