Simple Stuffed Avocados
This quick fix is super filling and super delicious. Simply stuff your favorite chicken or tuna salad in a halved avocado. Out with the bread, in with the avocado goodness. This recipe serves two.
1 Large Avocado
1 Cup of Prepared Chicken or Tuna Salad
Halve your avocado using a knife. Cut to the center of the avocado; when you reach the pit, simply rotate the knife around the avocado's perimeter.
Remove the pit. Salt each half to taste.
Now, add a 1/2 cup scoop of tuna or chicken salad to each half.
Done. An easy, yet fun and refreshing lunch is ready to be served!
