Summer Salad with Salsa
Mango Salsa is so delicious, why should one be limited to consume it only with caloric tortillas? Homemade Summer Salad with Salsa is a healthy, easy and refreshing choice on any hot summer day.
1 dozen Cherry Tomatoes
1 Red Onion
½ a cup Coriander
½ cup Parsley
¼ cup Mint
2 tbsp. Lemon Juice
1 tbsp. Olive Oil
Salt and Pepper
First, cut the mango in little cubes. To do this easily, cut out larges slices of mango vertically around the heart of the mango and then layout each section skin-down. Cut a grid pattern deep into the flesh of each portion, and then carefully remove the skin from the mango, releasing the perfect little mango-squares.
Cut the avocado into small cubes using the same grid-technique.
Cut each cherry tomato in half twice, into quarters.
Peel and chop the cucumber into small cubes.
Chop the red onion into little pieces.
Chop the parsley, the mint and the coriander into little pieces.
Mix all of the chopped ingredients together in a medium-large bowl.
Spray or drizzle a light layer of olive oil on top and sprinkle on the lemon juice.
Finally, salt and pepper the salad, and enjoy!
