Summertime Spinach Salad
This summer salad brings together healthy spinach, sweet fruit, and crunchy almonds for a quick and easy meal. This six ingredient salad is the perfect way to put together a delicious and wholesome meal in ten minutes or less.
¼ cup Sliced Almonds
½ Medium Apple
3-4 Medium Strawberries
2 cups Baby Spinach
1 tsp. Balsamic Vinegar
1 tsp. Extra Virgin Olive Oil
Measure 2 cups of baby spinach into a medium bowl. This should be about two handfuls, or enough to fill the bowl most of the way. Wash thoroughly in the sink and dry on a paper towel.
Wash and cut a medium apple in half. Save one half for later, or eat on the side. Cut apple into bite-sized cubes, and set aside.
Wash and cut 3-4 medium strawberries into thin slices. I cut the strawberries in half lengthwise, then into slices widthwise. Set these aside.
Using a knife, peel and slice one ripe kiwi and set aside.
Finally, add the washed and dried spinach back into the medium sized bowl. Add apples, strawberries, kiwi, and almond slices, and mix gently with a fork or salad spoon.
For the dressing, I made my own using a shot glass. Since a lot of college students don’t have measuring spoons, the shot glass is a great substitute. Fill about ¼ of the shot glass with balsamic vinegar, and ¼ with extra virgin olive oil. Cover the shot glass, and shake until the vinegar and oil mix. Drizzle onto the salad and serve.
If you have a dressing you would prefer, use it! White wine vinegar and olive oil are also a good mix, or even a simple Italian dressing.
