Two Minute Microwave Breakfast
No college student has time to whip up a hearty, stick-to-your-ribs type breakfast on a weekday morning chock full of classes and hectic commutes. Most are lucky enough to grab a pop tart on their way out the door. With this recipe you can say goodbye to your days of unsatisfying (and unhealthy) pre-packaged breakfasts. Rejoice hungry college students everywhere because a healthy, easy and quick breakfast is no longer out of reach. If you can press the start button on a microwave, then you can make this breakfast no problem.
2 Eggs OR 3/4 cup Egg Mixture (the kind that comes in a carton). Low-Cholesterol Option: use 3 - 4 Egg Whites
1/4 cup Shredded Cheddar Cheese (a palm full) (optional)
1/2 cup chopped veggies: Go crazy! Cherry Tomatoes, Spinach, Broccoli, Peppers, and Mushrooms are all great choices (also optional)
Potential Seasonings: Salt, Pepper, Season Salt, Hot Sauce
Crack eggs into a microwave safe dish. Whisk with a fork (or whisk) for 1 minute; imagine you are trying to get as much air into the mixture as possible. This results in that delicious, fluffy texture.
Add in the cheese, veggies, and salt/pepper to the beaten eggs. You can add the hot sauce in this step too, or wait till the end to put it on top. Make sure all the add-ins are properly mixed in and covered by the egg mixture.
Place the bowl in the microwave for 90 seconds.
Take the bowl out of the microwave, stir up the contents, and put it back in for another 30 seconds. If not firm after this step, continue cooking the eggs for additional 30 second intervals (all microwaves are different!)
Voila! Add more hot sauce and cheese to top off your delicious breakfast and feast!
