Vegetarian Microwave Enchiladas
Who has time to bake enchiladas in the oven? Who has an oven? Instead, make these easy, delicious & fast enchiladas in the microwave whenever a craving hits. Substitute low fat cheese and low-carb tortillas for a lower calorie meal!
Tortillas, Corn or Flour, any size - your preference
1 can Enchilada Sauce
1 can Black Beans
4 oz. Shredded Cheese (Mexican Blend or Mozzarella)
Lay out desired number of tortillas on a plate or shallow microwave-safe baking dish.
Next, pour enchilada sauce down the middle of each tortilla.
Then scoop the black beans on top.
Now, generously sprinkle most of the shredded cheese over the black beans.
Roll up each tortilla, cover in enchilada sauce, and top with remaining cheese for garnish.
Finally, microwave for approximately 5 minutes, until heated throughout and cheese is melted.
Remove from microwave carefully, let stand for 2-3 minutes and enjoy!
